We had this freaky Merlot-Saison coferment sitting in grenache barrels. We also had some amazing cherries wild-fermenting in shiraz barrels. They were made for each other, this much was obvious. The true brainwave was blending in a juicy, zippy citrus Berliner Weisse. That lifted the whole thing into shockingly mouth-watering terrain. Crazy complex, far out wild aromas, droolworthy sour hit, it all comes together like we've never seen before, and I doubt we will again. This is our fourth barrel tangent.
